Happy first Tuesday of spring, friends!

Just wanted to share a few things with you, including the perfect easy recipe for the upcoming Easter weekend...

I was back on Chef AJ recently, and made my HAPPY* peanut butter ball recipe (found on page 61 of For Fork's Sake). Check it out!

With Easter coming this weekend, I though I'd share a recipe that is easy and fun, and one that everyone enjoys:

Deviled Not-Eggs 🐣

Makes 20 'not eggs'

Ingredients

10 small egg-size red or white potatoes

3/4 C hummus

2 tsp dijon mustard

2 TBSP relish

1/2 tsp garlic powder

1/2 tsp onion powder

dash of salt or black salt (kala namak)

dash of pepper

sriracha (optional)

smoked paprika (to garnish)

Directions

Boil potatoes until you can pierce them with a fork. Let cool completely.

When cool, cut in half and use a melon baller or small spoon to scoop out a hole (where 'yolk' would go if it were an egg).

Mash half of the potato balls with a fork or potato masher and then mix with the hummus, mustard, relish, garlic and onion powder.

Add sriracha or hot sauce if you'd like (I usually make half and half).

Fill the holes with the potato/hummus mixture and garnish with a sprinkle of smoked paprika.

Enjoy!
